Lentil, Baby kale and Avocado Salad with Coconut oil Dressing

I felt so guilty while I was eating chips with beer at last midnight. But I just couldn't stop eating lol. Being very beat after a pert-time job so I need something indulge me. I got full and went to sleep with some guilt. Strangely enough, getting up in the morning, I heard my stomach was growing. Why? Thankfully, I could remember about last night so I started thinking about healthy breakfast and made it! This DETOX salad is loaded with lentil, baby kale, avocado, red onion and walnut. The dressing is made with coconut oil, balsamic vinegar, honey, salt and pepper.It's an extremely high protein, gluten-free, nutritious and delicious meal! Sounds so perfect, doesn't it?

Lentil,Baby kale and avocado salad with coconut oil dressing

•Ingredients serve:3~4

15oz can lentil

1cup baby kale

1 abocado, diced

1/4 red onion, chopped

walnut, crushed

Dressing

2tbs coconut oil

2tbs balsamic vineger

2ts honey

salt and pepper, to taste

•Instructions

1.Rinse and drain lentils.

2.Place all ingredients in a large bowl and combine.

3.Whisk together the dressing ingredients.Pour the dressing over the salad, toss to combine and adjust salt if necessary.

4.Serve immediately or preserve in the fridge until flavors develop more.

•材料

レンズ豆の水煮缶 400g(内容量240g)

ベビーケール 1パック

アボカド  1こ 

レッドオニオン  1/4こ

くるみ  好きなだけ

ドレッシング

ココナッツオイル  大さじ2

バルサミコ酢  大さじ2

はちみつ  小さじ2

塩・胡椒

•作り方

1.レンズ豆缶の水を切る。アボカドはダイス状にレッドオニオンは荒くみじん切りにし、辛いようなら水にさらしておく。くるみは砕く。

2.すべての材料をボールに入れ、混ぜ合わせる。

3.ドレッシングの材料を全て混ぜ合わせ、サラダにかけ、さらに混ぜ合わせる。必要ならば塩胡椒で味を調える。

4.お皿に盛り付けて完成。(味がしっかり馴染むまで冷蔵庫に入れてもok)
